I am cooking today. It doesn’t happen very often. The girls keep looking at each other with that, “What the hell is going on?” look.

Don’t get me wrong, I like to cook. I’m just not very good at it. And whatever prep time is suggested, just know that it will take me twice as long.

I would like to cook more frequently. Slicing and dicing with ease. I should find some classes. Intro stuff. Best knives to use. Best pots. Selecting a large leek. Cause really, what is a large leek? My choice of large leek might not be what the recipe needs.

I am making Sweet Corn Risotto and Potato Leek Soup. Both come from my crockpot for two cookbook. Which I selected because crockpot seems simple and two is just the right portion size. Enough to have leftovers just once — not four times.
Yeah, risotto without constant stirring. I’ll let you know how it turns out.
